The Kitchen Knife

I.

The coffee tasted like nothing. Frank Miller knew this because he had spent thirty-five years learning to notice the things that tasted like nothing -- the coffee at the committee offices, the beer at his apartment, the rain on his face when he walked home in November. Nothing was what you got when you stopped expecting anything else.

Investigator O'Brien sat across the metal table with the tired face of a man who had seen too many men like Frank and did not have the energy to be surprised. He had a stack of papers in front of him and a pen in his hand, and he was using both the way a mechanic uses a wrench -- to tighten something that was already loose.

"Start from the beginning," O'Brien said.

Frank drank his coffee. It tasted like nothing. "There are four batches," he said. "That's all."

II.

Frank's first memory was of his mother's kitchen. It was small and always smelled like garlic, and his mother stood at the counter chopping vegetables with a knife that had been in the family for as long as he could remember. She taught him to hold the knife with his thumb against the blade, to feel the weight of it, to understand that a knife was not a tool but an extension of your hand.

"Every cut tells a story," she said. "The question is whether the story is true."

He understood better when he was nineteen and got his first job at a food processing plant in the Southwest Side of Chicago. The plant made canned goods -- beans, pasta, soup. His job was to sort and classify. Good food went one way. Bad food went another. He learned to tell the difference by looking, by touching, by smelling. He learned to number the batches. Batch one, batch two, batch three.

Then came the problem food plant, where he was assigned to destroy batches of food every week. He numbered them. He classified them by the severity of their defect. Some batches were only slightly off -- cans that were dented, boxes that had been exposed to moisture, jars that had sealed imperfectly. Other batches were dangerously defective -- food that had been contaminated, food that had gone bad, food that would make people sick if they ate it.

He destroyed them all. He did not ask why. He did not ask who decided what was defective and what was not. He just did it. Every week. Every batch.

Linda left in the spring of 1991. She found a box of unopened cans in his cupboard -- cans he had saved, cans that were perfectly fine, cans that he had kept because destroying them felt wrong and keeping them felt worse. She held one in her hands, read the label, and looked at him.

"You know these are good," she said.

"I know," he said.

"Then why did you destroy the others?"

He did not have an answer. She left anyway.

III.

The truth was not dramatic. It was small and ugly and it lived in a man named Tony Russo, a quality inspector at the plant who marked good food as defective to meet quotas. The quotas were arbitrary -- a number someone in management made up to look busy. Tony marked the food. Frank destroyed it. Frank numbered it. Frank classified it. Frank gave it nothing else because he did not have anything else to give.

O'Brien filed his report. Nothing changed. The quotas stayed. The plant kept running. Frank went back to his apartment, opened a beer, and looked at the knife collection Harold had sent him -- a Christmas gift, arranged on a cutting board.

Frank did not know what the pattern was supposed to be. He drank his beer. The knife stayed on the table.
